Lemon-Peach Frozen Yogurt

If you want a delicious dessert without the fat and sugar of a commercial ice cream brand, look no further! The fresh lemon juice and zest enhance the natural peach sweetness in this recipe and a small amount of vodka keeps the consitency creamy. (Don't worry, you won't taste or "feel" it.) 

Servings: 7 - ½ cup each
Yields: 3 ½ cups


1 lb (2 ½ cups) partially frozen sliced peaches
1 cup chilled whole milk plain Greek yogurt
¼ cup FIFTY50 Low Glycemic Fructose Granulated Sweetener
1 tablespoon freshly squeezed lemon juice
1 teaspoon lemon zest (½ lemon)
2 teaspoons vodka
pinch salt


Note: This recipe has been made with an electric frozen yogurt/ice cream maker. However, the prepared mixture can also be poured directly in a plastic container with a tight-fitting lid and frozen until desired consistency is reached (2-3 hours). When left overnight or longer in the freezer, this frozen yogurt should sit out on the counter for 15-30 minutes before serving.

Step 1:  Place the frozen peach slices in the bowl of a food processor. Pulse for approximately 45 seconds or until the peaches are finely chopped.

Step 2: Immediately add all other ingredients. Blend for one minute until the mixture is smooth.

Step 3: Immediately transfer the mixture to the freezer bowl of a frozen yogurt/ice cream maker and follow manufacturer’s directions. Suggested churning time: 3-5 minutes.

Serve immediately or store in a plastic container with a tight-fitting lid in the freezer.
