Cherry Almond Coconut Granola

A freshly baked homemade granola that smells and tastes great!  This high-test breakfast food will give you the perfect start to your day but don’t be surprised if you find yourself sprinkling a little on your Greek yogurt snack or even that special occasion ice cream treat.

Servings: 18 (1/2 cup each)
Yields: 9 cups (approx)


6 cups Fifty50 Low Glycemic Hearty Cut Oatmeal
1 tablespoon cinnamon
⅔ cup shredded unsweetened coconut
1 cup raw almonds, coarsely chopped
2 tablespoons canola oil
½ cup Fifty50 Maple Syrup
1 cup dried cherries


Setup:  Preheat oven to 350 F.  Coat a 9”x13” baking pan with cooking spray. Set aside.

Step 1:  In a large mixing bowl combine the oats, cinnamon and coconut.

Step 2:  Pour the oil and maple syrup into a measuring cup.  Microwave on HIGH for 30 seconds. Pour over the oats mixture to coat thoroughly.

Step 3:  Add the oats mixture to the prepared pan.  Bake for 30 minutes or until oats turn golden. Stir every 15 minutes to assure even browning.

Finish:  Remove the pan from the oven.  Once cooled, toss in the dried cherries and mix well. Store in an airtight container.
