Scrumptious Party Shrimp

Appetizers at a party don’t have to be gooey and dripping in fat to be enjoyable. Guests will welcome this refreshing and tasteful appetizer that is not only good for the body but also leaves lots of room for the meal that’s on the way!

Servings: 12 (2 each)
Yields: 24 appetizers

Ingredients

24 rye Triscuit crackers
2 tbsp FIFTY50 No Sugar Added Creamy Peanut Butter
1 10” English cucumber, peeled (9 oz)
6-8 cocktail or large cherry tomatoes (8 oz)
24 medium cooked shrimp, tails removed

Directions

  1. Lightly coat the crackers with the FIFTY50 No Sugar Added Creamy Peanut Butter. Set aside.
  2. Wash and pat dry the vegetables and cut into 24 equal slices of each. Set aside.
  3. To assemble: place the peanut butter-coated crackers on a serving tray. Stack one slice of cucumber and one slice of tomato on each. Top each cracker with one shrimp. Cover with saran wrap and refrigerate one hour before serving.
