Pee Wee Oatmeal-Raisin Cookie Bites

Oats, oat bran, almonds, eggs and raisins are all nutrient dense ingredients that are good for the body. Bake them together with some flavorings and natural fructose sugar and you get a healthful cookie. Make them small so little fingers can easily grab them and you get a very happy child!

Servings: 24 (3 cookies)
Yields: 72 cookies (1” diameter)

Ingredients

2 cups FIFTY50 Hearty Cut Oatmeal
½ cup oat bran
1 ½ cups almond flour
¼ cup FIFTY50 Fructose Granulated Sweetener
½ teaspoon baking soda
⅛ teaspoon salt
1 egg
3 tablespoons egg whites
¼ cup canola or grapeseed oil
¼ cup butter, melted
¼ cup FIFTY50 Fructose Sweetened Maple Syrup
4 teaspoons vanilla extract
⅓ cup raisins

Directions

  1. Preheat oven to 350 degrees F. Cover two large cookie sheets with parchment paper. Set aside.
  2. Pour dry ingredients (oatmeal through salt) into the bowl of a food processor. Pulse 15 times to blend well.
  3. In a separate large bowl whisk together the egg and egg whites then add in the remaining wet ingredients (oil through vanilla extract). Add the flour mixture to the wet ingredients and mix until well combined.
  4. Sprinkle in the raisins and mix in to distribute evenly.
  5. Place rounded teaspoons of batter on the prepared cookie sheets. Slightly flatten tops with your finger or a teaspoon
  6. Bake cookies 15 minutes or until golden. Remove and cool on a cookie rack.

These cookies can be stored in a tin in the refrigerator for 2 weeks without losing their freshness. They also freeze well.
