Chocolate Glazed Almonds

Simple ingredients that bring out the best flavor and texture in each other. This is a real homespun treat that leaves the palate smiling even after the last swallow.

Servings: 16 (2 pieces each)
Yields: 32 pieces 1.5” x 2”

Ingredients

2 cups roasted* almonds
6.5 oz FIFTY50 Sugar Free Dark Chocolate Bar, cut into small pieces
⅓ cup freshly brewed espresso coffee (regular or decaffeinated)**
1 tbsp butter
1 tbsp Grand Marnier or Contreau orange liqueur (optional)
½ tsp sea salt
1 tbsp shredded unsweetened coconut

Directions

  1. Place the almonds in a single layer on a cookie sheet covered with parchment paper to form a 13” x 6” rectangle.
  2. In a small double boiler, add the chocolate pieces and slowly allow them to melt, using a spatula to blend. Do not let the water touch the chocolate.
  3. Brew the coffee and immediately add it to the melted chocolate. When well blended, add the butter, allowing it to melt. If using, add the liqueur and mix in well.
  4. Using a spoon, carefully pour a thin layer of the chocolate mixture evenly over the almonds. Immediately sprinkle on the salt and coconut. Allow to air dry overnight before cutting into pieces. Do not refrigerate. Best eaten within 1 week.

* To roast almonds: Preheat oven to 350° F. Arrange almonds in a single layer on a jelly roll pan. Toast for 3-4 minutes on each side. Cool before using.

** If an espresso machine or coffee maker is not available, use instant espresso coffee granules and follow instructions on the jar.
