Cherry Almond Chocolate Biscotti

Some people use almond flour to avoid gluten. Now you can also use it to prevent blood glucose spikes. These biscotti not only taste great but they are low GI and are as good for you as cookies get! Substitute cranberries for the cherries for a festive holiday treat!

Yields: 32 biscotti

Ingredients

1/4 cup grapeseed or canola oil
1 ½ cup FIFTY50 Low Glycemic Maple Syrup
2 eggs
2 tbsp vanilla or almond extract
3 cups almond flour
¼ cup FIFTY50 Low Glycemic Fructose Granulated Sweetener
1 tsp baking soda
7 pieces FIFTY50 Sugar Free Dark Chocolate Bar, ​coarsely chopped
⅓ cup dried cherries, coarsely chopped
¼ cup slivered almonds

Directions

  1. Preheat oven to 350 degrees. Line a large cookie sheet with parchment paper.
  2. In a medium mixing bowl, combine the first 4 ingredients (oil through almond extract) using a hand mixer on medium speed for 2 minutes or until frothy. Set aside.
  3. In a large mixing bowl, combine the almond flour, fructose and baking soda. Add the wet ingredients and mix until well combined. Fold in the chocolate, cherries and almonds. Dough will be wet and sticky.
  4. Divide the dough in half and place both halves on the prepared cookie sheet about 3” apart. Using a spatula or knife, form 2 long logs (14”x3”).
  5. Bake the logs for 30 minutes. Remove from oven and, lifting the two sides of the parchment paper, transfer the logs to a cooling rack for 10 minutes. (Do not remove the parchment paper from under the logs.)
  6. Gently lift one log at a time from the parchment paper and place on a cutting board. Cut 16-½” slices on the diagonal with a serrated knife.
  7. Place the parchment paper back on the cookie sheet and lay the biscotti flat on one side. Bake 8 minutes. Remove the biscotti from the oven, flip them onto the other side and bake another 8 minutes.
  8. When done, transfer the biscotti to a wire rack to cool before serving or storage.
