Lemon-Peach Frozen Yogurt

If you want a delicious dessert without the fat and sugar of a commercial ice cream brand, look no further! The fresh lemon juice and zest enhance the natural peach sweetness in this recipe and a small amount of vodka keeps the consitency creamy. (Don't worry, you won't taste or "feel" it.) 

Servings: 7 - ½ cup each
Yields: 3 ½ cups

Ingredients

1 lb (2 ½ cups) partially frozen sliced peaches
1 cup chilled whole milk plain Greek yogurt
¼ cup FIFTY50 Low Glycemic Fructose Granulated Sweetener
1 tablespoon freshly squeezed lemon juice
1 teaspoon lemon zest (½ lemon)
2 teaspoons vodka
pinch salt

Directions

Note: This recipe has been made with an electric frozen yogurt/ice cream maker. However, the prepared mixture can also be poured directly in a plastic container with a tight-fitting lid and frozen until desired consistency is reached (2-3 hours). When left overnight or longer in the freezer, this frozen yogurt should sit out on the counter for 15-30 minutes before serving.

  1. Place the frozen peach slices in the bowl of a food processor. Pulse for approximately 45 seconds or until the peaches are finely chopped.
  2. Immediately add all other ingredients. Blend for one minute until the mixture is smooth.
  3. Immediately transfer the mixture to the freezer bowl of a frozen yogurt/ice cream maker and follow manufacturer’s directions. Suggested churning time: 3-5 minutes.
  4. Serve immediately or store in a plastic container with a tight-fitting lid in the freezer.
