Cherry Walnut Chocolate Clusters

No guilt and no blood glucose spiking; these chocolate treats will be there for the grabbing in almost no time. Maybe you should double the recipe but keep to two pieces per serving; this is a treat after all!

Yields: 6-2” clusters

Ingredients

1⁄4 cup (1 ounce) unsalted walnuts, coarsely chopped
1 ounce dried cherries or 4 large fresh cherries, chopped
12 squares (2.5 ounces) FIFTY50 Low Glycemic Milk Chocolate Bar 1⁄8 teaspoon sea salt, coarse crystals 

Directions

  1. Line a cookie sheet with waxed or parchment paper.
  2. Combine the walnuts and the cherries in a small bowl. Set aside.
  3. Place the chocolate squares in a microwave-safe bowl and microwave for 2 minutes, stopping every 30 seconds to scrape down the sides.
  4. Pour the melted chocolate over the cherry-walnut mixture. Stir to evenly coat.
  5. Place 6 heaping tablespoons of the mixture on the prepared cookie sheet. Sprinkle with the sea salt.
  6. Refrigerate for an hour or more.

May be stored in a tin or plastic container with tight-fitting lid. Best when kept refrigerated.
