Cherry Almond Coconut Granola

A freshly baked homemade granola that smells and tastes great!  This high-test breakfast food will give you the perfect start to your day but don’t be surprised if you find yourself sprinkling a little on your Greek yogurt snack or even that special occasion ice cream treat.

Servings: 18 (1/2 cup each)
Yields: 9 cups (approx)

Ingredients

6 cups Fifty50 Low Glycemic Hearty Cut Oatmeal
1 tablespoon cinnamon
⅔ cup shredded unsweetened coconut
1 cup raw almonds, coarsely chopped
2 tablespoons canola oil
½ cup Fifty50 Maple Syrup
1 cup dried cherries

Directions

  1. Preheat oven to 350 F.  Coat a 9”x13” baking pan with cooking spray. Set aside.
  2. In a large mixing bowl combine the oats, cinnamon and coconut.
  3. Pour the oil and maple syrup into a measuring cup. Microwave on HIGH for 30 seconds. Pour over the oats mixture to coat thoroughly.
  4. Add the oats mixture to the prepared pan. Bake for 30 minutes or until oats turn golden. Stir every 15 minutes to assure even browning.
  5. Remove the pan from the oven. Once cooled, toss in the dried cherries and mix well. Store in an airtight container.
